Jiro Ono
Born in 1925, Jiro Ono has been making sushi for over 75 years. He was awarded his first Michelin star in 2008 and retained three stars until the restaurant was delisted to allow fairer competition. He trains his apprentices for a minimum of 10 years before they are allowed to make tamago (egg sushi).
